GoNOLA Recipes at Home: Breesy Beefy Mac, Hold the Cheese!

Recipe for the new version of New Orleans Saints quarterback Drew Brees’ favorite food served at the M Bistro to make at home for tailgates!

What would it be like to be in New Orleans’ beloved quarterback’s shoes for a day? To know his morning rituals, what music motivates him, where he goes for a moment of Zen? While we may never know those personal details – unless we’re going for a restraining order – we can feel like we know Drew Brees a little bit better by experiencing the way to his heart: his favorite meal. Last year we announced that the M Bistro put his favorite dish on their tailgate menu – Breesy Beefy Mac. After Chef de Cuisine Emily Dillport discovered the Saints quarterback actually prefers the meal without cheese, a new version was created supplementing the extra dairy for a zesty mix of bright red tomatoes and jalepenos. Impress friends with your knowledge of Drew Brees by sharing his favorite meal with them at Saints tailgates – since you and Drew are tight like that.

· 1 cup chopped andouille
· 1-1/2 pounds lean ground beef
· 1 tablespoon flour
· 2 teaspoons Worcestershire Sauce
· 1 cup chopped tomatoes
· 1 tablespoon chopped jalapeños
· 3/4 teaspoon salt
· 1/4 teaspoon pepper
· 3/4 cup uncooked macaroni or pasta of your choice, cooked, drained

Preheat oven to 375 degrees. Melt the butter in a hot skillet, add andouille and sauté. Once the andouille is crispy, add ground beef. Break up the ground beef, and cook until the beef is done all the way through. Stir in flour until smooth.

Add Worcestershire sauce. Simmer until mixture thickens. Add tomatoes, jalapeños, salt and pepper and stir well. Mix the sauce with the cooked pasta, and place into a well-greased oven safe dish.

Bake for 7 minutes or more at 375 degrees, until dish is heated through.
