Rather than the sugary, fluorescent hurricanes you might find on Bourbon Street, Emeril’s version is a nod to the original 1939 drink – you can get it at the restaurant now through Monday, paired with seasonal king cake doughnuts. The combination of dark and light rums are a flavorsome mix while passion fruit juice and fresh lime create exotic sweetness and a rose gold color.
Recipe by Emeril’s Delmonico
Yield: 1 serving
- 1 ounce light rum
- 1 ounce dark rum
- 1 ounce passion fruit juice (you can typically find fresh passion fruit at Whole Foods)
- Juice from half of a lime
Fill a cocktail shaker with ice then add the rum, passion fruit juice and juice from the lime and shake until well chilled, about 15 seconds. Strain over ice into a stemmed glass and serve.
